Why Cinnamon Rolls


Straight from the mouth of my little machine, I have a cinnamon roll recipe. These are so good, yet so demanding. Nevertheless, I wanted to post a cinnamon roll recipe because, frankly cinnamon roll recipes on the web are blaaahhh!

The Best Cinnamon Rolls


Maybe I say this because I am spoiled. Up in North Louisiana, there were some great cinnamon rolls made by a woman who had cooked forever. Her name, I have unfortunately forgotten. I hear she first cooked at the local Popeye's fast food restaurant in the late 1980's. Most recently she cooked at Landry's Seafood on the Farmerville Highway. One thing that made her special was her downright mastery of the kitchen. At Landry's, every meal came with a cinnamon roll soaked in icing - as is customery in the south. But the goo didn't hide a cheap cinnamon roll, it covered a sweet bread with the best texture I had ever seen. I am talking, being able to peel off the translucent layers of bread like thin sheets ya'll!

Finding The Recipe


This was some years ago. My beloved woman chef has since retired and the cinnamon rolls at Landry's are now mediocre. But before the cinnamon rolls changed, I brought one of them home, sniffed it, squeezed it, gently nibbled on it a bit, touched the filling to see how far it would stretch - about 3 inches. I tried at least 20 times to copy that woman's recipe, failing over and over again, sometimes contemplating whether I should just ask her for the recipe, but knowing deep inside that it would be such a violation... then, finally, I nailed it :)
Now before I trust you with the recipe, please listen. The four most important things for a great cinnamon roll is to:
1) Make sure the dough rises.
2) Knead the dough well.
3) Bake the cinnamon rolls long enough.
4) Get a good recipe.

You may have to practice a few times to get these things right. I have provided the recipe below. Enjoy!

The Cinnamon Roll, Torn


The Cinnamon Roll Recipe in Grams and Cups



The Bread Recipe


1 3/4 Cup All-Purpose Flour
4 Tbsp Butter
1/2 Cup Milk
1 Large Egg
3 Tbsp White Sugar
1/2 tsp Salt
1 1/2 tsp Instant Yeast

The Filling Recipe


1 3/4 tsp Cinnamon
2 Tbsp Butter
1/4 Cup Raisins
1/4 Cup Brown Sugar

The Icing Recipe


4 oz Cream Cheese
4 Tbsp / 56g Butter
a little ginger
2 Cups / 220g Powdered/Icing Sugar
sweetened coconut flakes

The Instructions


1. Mix the Sugar and Milk together
2. Warm the Sugar + Milk to about 100F
3. Add Instant Yeast and wait 10 minutes
3. Mix together all other Bread ingredients in a separate bowl.
4. Dump the Sugar + Yeast + Instant Yeast into the bowl
5. Mix all the ingredients together
6. Knead dough on floured counter until soft 3-5 minutes
7. Put dough in container at room temperature and Cover the dough and let rise for 2 hours.
8. Place the dough on floured countertop and press to get rid of bubbles
9. Stretch/Roll dough to about 1/2 inches thick
10. Pour or rub butter on dough
11. Combine the cinnamon, raisins, and brown sugar
10. Pour the brown sugar/cinnamon/raisin combination evenly on dough.
11. Rollup the dough into a log form and pinch the ends closed.
12. Cut individual 3" cinnamon rolls with a sharp knife - little disc, hockey puck shapes.
13. Place the rolls in a glass dish or shall cake pan
14. Cover the rolls and let rise for 45 minutes
15. Bake for 20 minutes at 350F
